FRUIT LEATHER
This can be made with any seasonal fruit combination but I find apple’s a good base ingredient
4 apples, peeled and diced
1 punnet of raspberries
juice of 1 lime 
2 roasted and diced beetroots
2 tbsp chia seeds
4 tbsp date syrup
water 
1. in a large pot, combine apples, beetroot and raspberries with about half an inch of water, cover and bring to a boil
2. reduce the heat and leave your fruit/vege mix to simmer until soft
3. pour the mixture into a blender along with your lime juice, date syrup and chia seeds and blend until smooth (add more date syrup if needed)
4. line your dehydrator (or oven tray) with parchment paper and spread the fruit mixture on top about 1/4 on an inch thick
5. dehydrate or bake at 45C until dry but still supple
6. carefully peel your fruit leather off the parchment paper, roll and tie with string ready to eat
